the history of domaine pascal jolivet
In 1926, the Jolivet family entered the world of wine with the creation of the trading company Jolivet et Fils. Prior to this, Louis Jolivet and Lucien Jolivet had been cellar masters at Château de Tracy. They were responsible for the selection of the wines, their purchase in bulk, their bottling and their distribution in the Sancerre region. Jacques Jolivet, Lucien's son, continued the wine business while paying for a beverage distribution company.
In 1983, Jacques Jolivet bought a small trading company "Les Grands Vins du Val de Loire" and asked his eldest son, Pascal, who was then 25 years old, to run it. Gérard Boyer, the famous three-starred chef of the restaurant "Les Crayères" in Reims, who was one of Pascal's first clients and friends, suggested that he put his name forward to develop his estate and his own brand.
In 1987, Pascal gave birth to the brand "Pascal Jolivet" while working as a wine merchant. However, he needed a more efficient infrastructure in order to develop his own wine production. Consequently, it was decided to invest in the early 90's in the construction of a cellar in Sancerre equipped with a thermo-regulated stainless steel vat room, inspired by the installations in Champagne.
In 1990, Pascal Jolivet did not yet own a vineyard and made a radical decision to hire the young oenologist Jean-Luc Soty to create his own style of natural winemaking using only indigenous yeasts. In 1993, Jacques Jolivet proposed to his son Pascal to acquire a 6-hectare vineyard belonging to their cousins on the best terroirs of Bué in Sancerre: Le Chêne Marchand, Le Grand Chemarin and La Plante des Prés, thus giving birth to the Maison Pascal Jolivet.
In 1995, the estate bought its first Pouilly Fumé vines, 6.5 hectares in Tracy-sur-Loire. For the 1995 and 1996 vintages, the prestigious Wine Spectator magazine ranked the "Pascal Jolivet White Sancerre" among the top 100 best wines of the year.

The success of Maison Pascal Jolivet led to the construction of a new cellar in 2001, designed according to the principle of gravity in order to guarantee a gentle handling of the grapes, from fermentation to bottling. Subsequently, the estate expanded to cover 120 hectares of vineyards between Sancerre and Pouilly-sur-Loire as well as 60 hectares in Touraine for the "Attitude" range. The 120 hectares now represent about 80% of the production of the signature wines whereas the other 20% are purchased from winemaking partners who have been loyal to the company since its creation.
Over the years, Pascal has developed a very recognizable style of wine thanks to its purity and elegance. He has created an organic winemaking method that involves light settling followed by fermentation of the juice with indigenous yeasts. Ageing "on Lies" plays a crucial role in the concentration and complexity of the wines produced. This very natural method and the very long fermentations allow the wines to be nourished and stabilized with very low doses of sulfur.

By focusing on attention to detail, Jolivet wines have succeeded in developing their uniqueness over the years. After the departure of their long-time oenologist, Pascal chose to recruit Valentina Buoso, a talented young Italian oenologist who had been conducting studies on indigenous yeasts.
Pascal's main objective was to accentuate the fruity quality of his wines while bringing even more finesse and precision to them. Thanks to Valentina's remarkable work, the 2013 vintage was a real success, with a Sancerre of remarkable purity, refinement and subtlety while the Pouilly-Fumé has an assertive and robust structure. In both cases, the wines are distinguished by a lively and fruity texture, perfectly integrated.
In search of research and authenticity, Pascal completed a partnership in 2016 with the Dauny family, pioneers of organic farming in Sancerre since 1966. This time, Pascal draws on 50 years of experience and assigns the management of the 145 hectares of the estate to Benoît Dauny, who will be responsible for producing organically grown grapes.

The Sancerre Blanc "Les Caillottes" is a magnificent plot selection from the Domaine, made from 100% limestone. The name "Les Caillottes" was given in reference to the Kimmeridgian limestone located in the village of Bué. This iconic cuvée of the Maison Jolivet reveals a lively, deep, complex and elegant wine.
The plot selection Pouilly-Fumé "Les Terres Blanches" comes from the name given to the Kimmeridgian marls composed of 100% clay-limestone, located in the village of Boisgibault. The vinification is carried out by a light press which keeps only the free-run juice and the heart of the press in a natural way in a thermo-regulated stainless steel tank. This wine is characterized by its rich, dry, fruity, complex side with a beautiful aromatic finish.
