Sauternes wines
- Barsac, Bommes, Sauternes, Fargues & Preignac -
Renowned the world over, Sauternes is a sweet AOC wine produced in the Sauternes region, 40km from Bordeaux, between the left bank of the Garonne and the Landes forest. Covering some 2,000 hectares, the appellation's production area extends over the communes of Barsac, Bommes, Fargues, Preignac and Sauternes. The Bordeaux vineyard with the highest number of crus classified in 1855 (27 grands crus, i.e. around 40%), this is where you'll find prestigious sweet wines, highly aromatic and opulent.
The history of Sauternes wines
The history of Sauternes wines includes several rumors. The first dates back to 1836, when a Bordeaux merchant named Focke waited for long rains to end before starting the harvest at his chateau. As a result, over-ripe grapes began to rot, giving rise to successful sweet wines. The second was in 1847, when the Marquis de Lur-Saluces went hunting and ordered that the harvest wait until he returned. The noble rot formed during this wait, giving rise to the exceptional wine.
At the end of the 17th century, Dutch merchants encouraged the production of sweet white wines, which they loved. In fact, it was a Dutch naturalist who discovered Botrytis Cinerea, the fungus responsible for transforming wines into liqueurs.
In the 19th century, Sauternes wines enjoyed enormous success, and the Sauternes appellation d'origine contrôlée was recognized in 1939 by the authorities, who acknowledged the inimitable specificity of the terroir. Barsac wines are also part of the Sauternes AOC.
The Sauternes terroir
The Sauternes appellation is located on the left bank of the Garonne, some forty kilometers from Bordeaux. This is made up of two terroirs: on the right bank of the Ciron river, the communes of Bommes, Fargues, Sauternes and Preignac make up the Sauternais, and the AOC Barsac is located on the left bank of the Ciron. The climate of these two terroirs is oceanic, so the vines are protected from westerly winds by the Landaise forest, and their proximity to the Garonne River brings mildness and humidity.
The Sauternes vineyards are located on an east-facing plateau, on fossilized oyster limestone, marl and clay soils dating from the Tertiary era. These soils, which are typical of the Sauternes region, are whitish in color and enable the vines to benefit from the day's sunshine, which is then restored at night, reducing the risk of frost. The vines draw their water and nutrients from these soils, which are sometimes more than ten meters deep. As for the Barsac vineyards, which also have vine-friendly soils, they are planted on a highly fissured and permeable limestone plateau. Large pebbles dot the red soils typical of this terroir, justifying the originality of the Barsac AOC.
Grape varieties of Sauternes wines
With their unique climate, the Sauternes and Barsac appellations are home to some of the world's finest sweet wines. Bordered by the Garonne River, the Ciron flows through these two AOCs, creating early-morning fogs that trigger the formation of a fungus on the grapes called Botrytis Cinerea, which gives rise to noble rot, which increases the sugar content of the grapes. This only affects the berries on the vine, not the leaves or stems, and thus enables the production of sweet wines.
Made from three grape varieties, Sauternes wines are mainly produced from Sémillon (around 80%). This white grape, typical of the region, favors the development of noble rot. Beautiful golden color, round and fat, it brings aromatic finesse, harmony and complexity to the wines. Then there's Sauvignon Blanc (around 20%), a grape variety with melting, unctuous pulp and a musky flavor that adds acidity and a rich aroma. Last but not least, Muscadelle, which captures noble rot, producing a very sweet, slightly musky juice that adds a touch of complexity to the blend.
The style of Sauternes wines
Sauternes wines are sweet white wines with an intense yellow color that takes on an amber hue with age. Characterized by great aromatic complexity and opulence, the nose presents floral and fresh fruit notes such as acacia, pineapple, dried apricot and passion fruit, as well as hints of beeswax, almond and hazelnut. On the palate, the wines are characterized by their power, fatness yet elegance, captivating sweetness and exceptional aromatic finish. Depending on vintage and classification, a Sauternes can be kept for between 15 and 60 years.
Sauternes wine and food pairings
Sauternes wines offer a wide range of pairings. First of all, it can be enjoyed on its own as an aperitif, but also with foie gras and duck breast. It also goes perfectly with fine fish, shellfish and white meats such as sweetbreads, as well as blue cheeses and desserts, for which its residual sugar and candied fruit aromas make it a good choice at the end of the meal.
These wines have good ageing potential. Depending on the vintage, we recommend opening the bottle at least 1 or 2 hours before serving, and serving it at a temperature of between 8 and 10°C.
The best Sauternes wines
Among the best vintages of Sauternes wines are the 7 years, which are generally excellent. These include the 1987, 1997, 2007 and 2017 vintages, which are sweet, fruity, harmonious wines of incredible richness, remarkable fullness and long ageing potential!
The 2009 vintage is also one of the exceptional years in Sauternes, with a favorable climate that enabled the production of wines of extraordinary quality.
The great Sauternes vintages of the 21st century include 2001, 2005, 2007, 2009 and 2010. The following vintages are just as excellent, but are still a little young, so we'll have to wait a few years before they can fully express their potential!
Some prestigious Sauternes estates
Château d’Yquem: A renowned and iconic château among the sweet wines of Sauternes, Château d’Yquem is a Premier Cru Classé Supérieur that stands out for its rarity and the extraordinary complexity and consistency of the wines it produces.
Château Rieussec: 1st Cru Classé of Sauternes, Château Rieussec is known for its opulent and very sweet style. The wine displays exceptional richness and aromatic power, with fabulous aromas of exotic fruits, orange marmalade, and quince.
Château Coutet: 1st Cru Classé in 1855, Château Coutet is one of the oldest estates in Sauternes. The wines feature notes of white flowers, citrus, honey, and vanilla. As they age, the notes become deeper and include spices, exotic nectars, and candied fruits.
Château Guiraud: Located in Sauternes, Château Guiraud is the only Premier Grand Cru Classé from 1855 certified in organic farming. The wines produced have fruity and floral notes. They are excellent wines for aging, developing honeyed and candied notes over time.
Château Suduiraut: 1st Cru Classé of Sauternes, Château Suduiraut combines the power of Haut-Sauternais wines with the fruitiness of crus from Preignac and Barsac. The wines, with remarkable longevity, reveal an incredible complexity, harmoniously blending the strength of aromas of flowers, fruits, and roasted or candied grapes.
