Located just northwest of Perpignan, Domaine Gauby has become a benchmark for biodynamic winemaking in Roussillon. Spanning 85 hectares, including 45 in production, the estate is a symbol of sustainability and natural balance. The vineyards stretch across hillsides up to 300 meters above sea level and are rooted in a mosaic of limestone, marl, and schist soils. This unique terroir, coupled with a Mediterranean climate tempered by altitude, results in wines of exceptional freshness, intensity, and depth.
The estate is home to old vines—some over a century old—and cultivates iconic varietals including Syrah, Carignan, Grenache Noir, Macabeu, Grenache Blanc, and Roussanne. Domaine Gauby’s philosophy emphasizes soil health, biodiversity, and minimal intervention, ensuring each vine thrives naturally. This holistic approach yields grapes with expressive aromatics and vibrant energy.
In the cellar, the estate follows a low-intervention process using indigenous yeasts, minimal sulfites, and gentle vinification methods. Wines are aged in large wooden vats or concrete tanks to preserve purity and texture. La Muntada, a powerful and age-worthy red, exemplifies the estate’s depth. Vieilles Vignes offers a sophisticated expression of century-old vines, while Calcinaires provides an accessible yet vibrant introduction to the Gauby style.
Domaine Gauby’s white wines are equally compelling—crisp, mineral-driven, and full of life. From intense reds to precise whites, the estate produces wines that are unmistakably rooted in place. Discover their full range of natural, expressive wines now available on 12bouteilles.com.
