Domaine Paul Pillot: A Benchmark in Fine White Burgundy Wines

A family legacy rooted in terroir and precision

Domaine Paul Pillot is one of the finest representatives of the Côte de Beaune in Burgundy. Established in the early 20th century, the estate has remained a family affair for four generations and is now led by Thierry Pillot. With nearly 13 hectares under vine, the estate focuses on premier terroirs such as Chassagne-Montrachet, Saint-Aubin, and Santenay.

Thierry Pillot champions a low-intervention philosophy, respecting both vine and soil. The estate is managed sustainably, without herbicides or synthetic chemicals. Grapes are hand-harvested and vinified by plot to highlight the uniqueness of each terroir. This precision in viticulture and winemaking translates into wines that are vibrant, age-worthy, and intensely expressive.

The whites—made from Chardonnay—are celebrated for their minerality, tension, and refined texture. The Pinot Noir-based reds are delicate, aromatic, and structured with subtle spice and red fruit notes, offering excellent balance and complexity.

In the cellar, Domaine Paul Pillot follows a hands-off approach: natural fermentations, limited use of new oak (no more than 20%), and restrained sulfite additions. This respect for the grape and terroir results in precise, elegant wines with a deep sense of place.

The flagship wines come from Chassagne-Montrachet, showing layered aromas of white flowers, citrus zest, flint, and toasted hazelnuts. Saint-Aubin is fresher and more approachable in its youth, while the rare Santenay red offers red berries, soft tannins, and a smooth, earthy finish—ideal for food pairing.
