The journey of Marcel Ott, a young agricultural engineer from Alsace, began in 1896 when he settled in Provence on the land that would later become Domaines Ott. Upon his arrival, he was confronted with the destruction of the Provençal vineyards affected by phylloxera. Although the land was cheaper, the vineyards had to be entirely replanted. Marcel Ott decided to acquire several estates and began to restore them, with the ambition of creating great wines of Provence from noble grape varieties.
In order to obtain fresh and elegant wines, René Ott, Marcel's son, developed in 1930 a unique bottle shape with slender curves, inspired by the cypress trees of Provence and Greek amphorae. This emblematic bottle is today the signature of Domaines Ott.
More than one hundred years since their creation, Domaines Ott continues to produce exceptional wines under the direction of Christian and Jean-François Ott. These two cousins perpetuate with passion the unique know-how of four generations of winemakers.
In 2004, Domaines Ott joined the famous champagne house Louis Roederer in order to reinforce the passionate work of a fine viticulture as well as its international reputation.
The wine production of Domaines Ott is spread over three estates and two villages in the Côtes de Provence and Bandol appellations in order to produce wines with diverse aromatic nuances thanks to the richness of the different soils on each property.
LE CHÂTEAU DE SELLE
The Château de Selle was the first estate acquired by Marcel Ott in 1912. A 140-hectare estate located in Taradeau on the high plateaus of the Var, in the heart of the Côtes de Provence. On lands where only olive trees, lavender and mulberry trees used to grow, they now produce racy and elegant wines on the soil of gypsum, red clay, dolomite and sandstone. The estate benefits from a microclimate thanks to its location on high limestone hills inland. The winters are mild, the springs early and the summers very sunny, hot and dry. The château's vines are about 19 years old and are planted on terraced plots. The wine produced is a blend of several grape varieties: Cabernet Sauvignon gives complexity, elegance and power. The Grenache transmits depth and vinosity. The Cinsault adds finesse and roundness and finally the Syrah colours its dress.
Discovered in the 30's, Marcel Ott is seduced by the Clos Mireille, an old property located on the Mediterranean coast, in La Londe Les Maures, near the Fort of Brégançon. Not far from an old building built by the Benedictines in the 18th century, Marcel Ott undertook a lot of work to restructure the vineyard. The 16 year old vines are located on a soil composed of schist and clay without limestone, benefiting from sunshine and sea spray throughout the year. These ideal conditions give birth to delicate and singular wines.
Acquired in 1956 by the Ott family, Château Romassan is located in the west of the Var, in the heart of the Bandol region. The estate underwent major work with the complete replanting of the vines and the reorganization of the levelled plots into restanques and terraces. The eighteenth-century building overlooking the land was also completely restored. The 25 year old vineyard is composed mainly of Mourvèdre, a grape variety perfectly adapted to the arid climate and ascetic soil of the property. Grenache, Cinsault and Syrah are also present. This singular soil associated with a particularly dry sunny microclimate gives birth to elaborate and powerful wines for aging.

On all three estates, the grapes are harvested by hand to ensure the quality of the grapes and the preservation of the vines. A team of about 50 employees takes care of the vines daily throughout the year, including 200 seasonal workers during the disbudding period and 250 during the harvest. The use of a specific pruning called "palmette formation pruning" will allow the vines to defend themselves against various fungi and prolong their longevity.
Jean-François Ott is particularly intransigent in order to guarantee a constant quality of the wines of Domaines Ott. The limitation of the yields is a real commitment to produce grapes whose depth of taste and aromas meet the requirements of lovers of great wines. During the harvest, the grapes are rigorously sorted and only 70 to 80% of the harvest is blended in order to extract the best juice. The maturation and stabilization time is deliberately long to develop a form of complexity in the wines.
Since their creation, each of the domains has been cultivated with respect for the soil and the vines. This viticulture is based solely on natural products without chemical treatments and soils that have never been weeded to respect the quality of the terroir. This makes it possible to produce great wines from concentrated grapes that have taste, marked by the typicity of their terroirs.
In 2019, Domaines Ott began a conversion to organic farming. 2022 will be the first Ecocert certified vintage. They are also experimenting with a deposit system for large format bottles to reduce the environmental impact of bottle production by giving them a second life. A unique initiative in Provence.
Domaines Ott offers two ranges of wines: The wines of the estate, a range of haute couture wines and the signature wines "By Ott", a range of more accessible but equally qualitative wines. Each wine produced expresses with authenticity the style and terroir of its domain of origin.
The domain wines are, in the Côtes de Provence appellation, the rosé and red wines of Château de Selle, wines focused on finesse, and the rosé and white wines of Clos Mireille, more focused on gourmandise. In the Bandol appellation, Château Romassan and its red and rosé wines are structured wines.
The second range is the "Signature By Ott" wines. In the Côtes de Provence appellation, they are available in three colors: rosé, white and red. The wines are made from the grapes of the Domaines Ott as well as from grapes purchased from three partner winegrowers.
