Today all the vinification of the wines of the house Delas is done in small concrete vats of 85hl allowing to reinforce the parcel approach and the separation, terroir by soil of the lots.
This vat room, specially designed for the vinification of red wines, the complete restructuring of the breeding cellar, is one of the key elements of Maison Delas' quality approach, summed up in one sentence: to perpetuate and sublimate the expression of the terroir.
The breeding cellar has been completely redone. It's been a long time since the 600 Burgundian barrels from world-famous coopers, such as François Frères, Seguin Moreau or Damy, replaced the 2,500 hl of old casks, reformed as early as 1996. The relationship of trust with the cooper is paramount. Because if the passage under wood favors the wine, it does not mean to unbalance the organoleptic characteristics. It must allow, on the contrary, to extract all the personality of the fruit of the soil.
In a vineyard with steep and steep slopes, where you have to be the mason of your own vineyards, the dry stone walls are patiently rebuilt by a meticulous work of safeguarding the heritage. 2015 marks the culmination of the reconstruction of these walls so emblematic of the Hermitage hill.
