La Soufrandière: Aligoté « Aligato » cuvée Zen 2021
Burgundy - Aligote - White Wine -This Bourgogne Aligoté cuvée "Aligato" 2021 is a sublime organic white wine produced by the Domaine de la Soufrandière. Coming from vines taken over in 2016 by the estate and converted to organic and biodynamic farming, it is a small production of Aligoté facing east, at the foot of the Roche de Vergisson.
The Domaine de La Soufrandière strives to reveal the purest character of the wine with the least amount of inputs possible, so "Aligato" is presented as a "Zen cuvée". This means that it is vinified without sulfur until the moment of bottling, during which there is a total addition of up to 20 mg/l of sulfites. This is the operation to stabilize the wine; where normally for whites, the Demeter specifications allow 90 mg/l of sulfites in total and the Organic one, 150 mg/l and for other non-certified wines up to 210 mg/l.
Tasting notes:
The robe: deep yellow, golden reflections.
The nose: aromatic around the citrus fruit, lemony, acidulous apple, some buttered notes
The mouth: beautiful balance of fat/acidity, saline, long, complex, saline final
The 12bouteilles advice: A wine to enjoy with nice goat cheese, white meat or even a dish with sauce. This Aligoté is ready to drink, to be served at 12°C.
The Domaine La Soufrandière is a reference in the field of winemaking in the Mâconnais region of Burgundy. Founded in 1999 by the Bret brothers, this family estate extends over twenty hectares of vines cultivated in biodynamic agriculture. Their wines, made from Chardonnay, perfectly reflect the expression of the terroir and are recognized for their high quality. The Bret brothers attach great importance to respect for the environment and biodiversity, and this is reflected in their approach to production.
