Testamatta, “Crazy Head” in Italian – is the best expression to describe Bibi Graetz: a positive, creative and passionate person. Through Testamatta is expressed the purity, minerality and transparency of Sangiovese, from old vines located at the top of hills characterized by very rocky soils. A Super Tuscan made from 100% Sangiovese, the result of a combination of tradition and creativity.

Vinification and aging :
The season has been very stable, with a good balance between humidity and heat. A cold and dry winter. The mild climate gave the grapes exceptional quality
The grapes chosen for the development of Testamatta come from the 5 best plots of the Estate: Vincigliata, Londa, Lamole, Montefili and Siena. Each plot is sub-divided, and manual harvesting takes place up to 8 times to ensure the perfect ripeness of the selected fruits.
These 5 old plots, (up to 80 years old for some), are located in different areas in Tuscany
Fermentation takes place naturally with indigenous yeasts in open barrels (225L) for the smallest plots with 8 punching down and manual pumping over per day. The aging continues in barrels for 20 months.
