Located on Bordeaux’s prestigious Right Bank, Château Dassault is a celebrated Grand Cru Classé in the heart of Saint-Émilion. Acquired in 1955 by visionary industrialist Marcel Dassault, the estate was renamed to honor his family’s legacy. Today, under the leadership of Laurent Dassault, the property continues its pursuit of winemaking perfection.
The vineyard spans 50 hectares of clay-limestone and gravel soils, ideal for nurturing the region’s signature grape varieties. Thanks to meticulous work in the vineyard and cellar, Château Dassault has earned a place among the finest estates in the appellation.
The varietal composition includes 65% Merlot, which brings roundness and elegance, 30% Cabernet Franc for structure and freshness, and 5% Cabernet Sauvignon to enhance ageing potential. This precise balance results in wines that are rich, refined, and remarkably age-worthy.
The winemaking process at Château Dassault is driven by an uncompromising focus on quality. Grapes are harvested at peak ripeness and carefully sorted. Fermentation takes place in temperature-controlled stainless steel vats, followed by an extended maceration to enrich the wine’s complexity and aromatic depth.
The ageing process lasts 12 to 18 months in French oak barrels, 60% of which are new. This maturation enhances the wine with subtle notes of vanilla, toasted spices, and a refined oak influence, without overpowering the natural fruit character.
On the palate, Château Dassault presents a deep purple color, a bouquet of ripe black fruits like blackberry and cassis, and red fruits such as cherry and raspberry. The mouthfeel is silky, balanced, and complex, with a long, persistent finish.
This wine pairs perfectly with grilled red meats, game dishes, or hard cheeses like aged Comté or Parmesan. Serve at 16-18°C after decanting to fully appreciate its aromatic elegance.
Enjoyable in its youth for its roundness and fruit, it reaches its full potential after several years of cellaring. It can age gracefully for 10 to 15 years or more in excellent vintages.
