About Domaine Ponsot:

Nearly 80% of the domaine's plots are Grand Cru, a rarity that makes it one of the standard-bearers of great Burgundy wines the world over!
Between sustainable agriculture, organic farming and biodynamic viticulture, respect for the soil, biodiversity and the identity of the plots are at the heart of the domaine's struggle.
The wines are aged in oak barrels for two years. The estate does not use new barrels at all. This is because the natural aging cycles of wines from our Burgundy grape varieties are slow and require delicacy. However, with new wood, which is still very porous, the exchange with the outside of the barrel is much faster and does not respect time. What's more, the taste of oak, while apparently natural, is not original and comes neither from the terroir nor the grapes. The estate is quick to point out that it makes wine, not wine-and-oak-based beverages...
The wines are neither fined nor filtered. Since 1988, the estate has eliminated the systematic use of sulfur, reducing contact between the wine and oxygen during both ageing and bottling.
At Domaine Ponsot, the wine lover finds in the bottles the fruit of exceptional terroirs and the most exceptional wines produced by the vines!
