Languedoc - Vins de Pays des Pyrénées - White Wine -

100% Semillon. Parcel of 50 ares, 15-year-old vine grafted in 2006 by us (split grafting) with massal selections of Sémillon grown in a Mediterranean climate. Royat cordon vineyard.

Striving for perfect ripeness of fruit. Hand-picked at daybreak, in small crates. Transport to the cellar by refrigerated truck. Long pneumatic pressing (5 hours), whole bunches. Cold settling. Racking into new 500-liter demi-muids. Long fermentation (6 weeks) with natural yeasts. Aged in the same containers, with monthly stirring of the lees. Aged on lees for 12 months. Malolactic fermentation carried out. Rest in vats for 6 months before bottling after gentle filtration. Minimum SO2. Bottled for a minimum of 24 months at the Domaine.

Tasting notes :

Liquid gold color, complex, surprising nose of beeswax, saffron, stewed apricot jam, bourbon vanilla.
Powerful, dense, fat mouthfeel, present tannins, interminable finish, masterful touch of oxidation.

After an hour's aeration, a very different bouquet, dominated by rose and peony.
Stunning freshness despite the power and richness of an "old-fashioned" white wine.
