The traditional structure of the Cuvée Brut Carte Jaune is a blend of approximately fifty to sixty different crus: 50 to 55% Pinot Noir, 15 to 20% Meunier, and 28 to 33% Chardonnay. The Cellar Master must ensure a perfectly consistent flavour from year to year to restore all the character of Carte Jaune as well as its inimitable quality, colour and aroma.
