California - Napa Valley - Red Wine -Pym-Rae was the property of Robin Williams, bought by Tesseron Family from Château Pontet Canet in 2016 with the goal of creating an exceptional wine in the heart of Napa Valley.
The 2021 vintage blend is composed of 75% Cabernet Sauvignon, 10% Cabernet Franc, and 15% Merlot. In the pure style of the great Bordeaux wines, the Pym-Ray 2021 benefits from a long aging period of 16 to 18 months in French oak barrels, 50% new and 50% in concrete vats.The estate is 100% biodynamic and certified by Demeter USA.

Tasting of the 2021 vintage
Colour: deep red with garnet highlights
Nose: intense aromas of black plum, blueberry, blackcurrant and dried petals, accented by mineral nuances.
Palate: a creamy texture reveals gentle acidity and fine tannins. There is a subtle tension between flavours of dark fruit, fresh herbs, espresso and cocoa. A delicate dark chocolate bitterness lingers on the finish.

‘The blackberry, graphite, blueberry, oyster shell, bark and pine needle aromas are intense and very pretty. A real sense of forest fruit to this Medium-bodied with pretty transparency and ultra-fine tannins that melt into the wine. Racy at the end. Polished is the word. Very drinkable now, but better in two or three years’
The advice of 12Bouteilles: Pym-Rae 2021 will sublimate a piece of red meat, a game or a cheese platter. Remember to open the wine a few hours before tasting and serve around 16°C to 18°C.
