Penfolds : Bin 707 Cabernet Sauvignon 2024

South Australia - Red Wine -

Penfolds Bin 707 Cabernet Sauvignon 2024 is Penfolds' flagship Cabernet Sauvignon. First produced with the 1964 vintage, Bin 707 applies a philosophy similar to Grange to Cabernet: selecting outstanding fruit from several regions, building considerable concentration, completing fermentation in barrel and embracing new American oak as an integral part of the wine's identity. The 2024 combines this characteristic power with impressive fruit definition and tannic precision.

Penfolds Bin 707 Cabernet Sauvignon 2024: tasting notes

Colour: exceptionally deep, dark and intense.
Nose: blackcurrant, blackberry, blueberry and dark plum lead into cedar, graphite, mint and dark chocolate. New oak contributes walnut, spice and polished wood notes that gradually integrate with the fruit.
Palate: broad and concentrated, with considerable density yet impressive control. Dark fruit is framed by abundant, fine and polished tannins. Freshness, cedar and graphite bring tension to a powerful, persistent and remarkably precise finish.

A multi-regional Cabernet Sauvignon

Bin 707 2024 is 100% Cabernet Sauvignon, selected from vineyards including Coonawarra, Barossa Valley and Padthaway. As with Grange, Penfolds does not seek to express a single vineyard but selects the regions capable of building the desired house style each year. Coonawarra contributes freshness and structure, while the other regions add depth and richness.

The 2024 vintage

Conditions in 2024 produced small, highly concentrated Cabernet Sauvignon berries. Coonawarra was particularly successful, delivering Cabernet with excellent fruit maturity and precise tannic structure. This quality is evident in the finished wine: Bin 707 2024 is powerful and dense, yet freshness and finely defined tannins prevent it from feeling excessively heavy.

Winemaking and maturation

Bin 707 follows one of Penfolds' most distinctive winemaking signatures: fermentation is completed in oak before maturation in 100% new American oak hogsheads. Oak is not merely a background element here but an integral part of the style, contributing structure, spice and complexity to the Cabernet. The wine has 14.5% alcohol.

Critic scores

Bin 707 Cabernet Sauvignon 2024 received 97/100 from Wine Advocate and 97/100 from James Suckling, together with 96/100 from Decanter. Critics particularly highlight its concentration, balance and impressive tannin structure.

Food pairing, serving and cellaring

Serve Bin 707 2024 at 16-18°C with dry-aged rib of beef, grilled beef fillet, rack of lamb, venison, game or slow-braised meats. When young, allow 2 to 3 hours of decanting. Its concentration and structure give it the potential to develop for several decades.

12bouteilles recommendation

Bin 707 is to Cabernet Sauvignon what Grange is to Shiraz: a powerful and unmistakably Penfolds interpretation of a great international variety. The 2024 is particularly compelling for its balance of richness, freshness and tannic precision. New oak remains evident today, so several years in the cellar should allow Cabernet and oak to integrate and reveal considerably greater complexity.

FAQ – Penfolds Bin 707 Cabernet Sauvignon 2024

Where does Bin 707 sit in the Penfolds range?

Bin 707 is Penfolds' flagship Cabernet Sauvignon. While Grange represents the house's most prestigious expression of Shiraz, Bin 707 applies a comparable philosophy to Cabernet Sauvignon through multi-regional sourcing, considerable concentration and an assertive use of new American oak.

What is the difference between Penfolds Bin 707 and Grange?

The fundamental difference is the grape variety. Bin 707 2024 is 100% Cabernet Sauvignon, whereas Grange is built around Shiraz, sometimes with a small proportion of Cabernet Sauvignon depending on the vintage. Both nevertheless share key elements of the Penfolds house style, including multi-regional sourcing and maturation influenced by new American oak.

What is the difference between Penfolds Bin 707 and Bin 169?

Both are outstanding Penfolds Cabernet Sauvignons, but their philosophies are very different. Bin 707 is multi-regional and matured in new American oak, giving it a powerful style closely related to Grange. Bin 169 is sourced exclusively from Coonawarra and uses French oak, offering a more terroir-focused and classically elegant expression of Coonawarra Cabernet.

Bin 707 2024 or Grange 2022: which should you choose?

Choose Bin 707 2024 if you want the power of the Penfolds style expressed through Cabernet Sauvignon, with blackcurrant, graphite, structure and freshness. Choose Grange 2022 if you prefer the greater richness, depth and texture associated with Shiraz. They share a similar ambition but express two very different varieties.

Why does Penfolds use new American oak for Bin 707?

New American oak is an important part of Bin 707's historic identity and helps connect its philosophy with that of Grange. It contributes spice, chocolate and oak-derived complexity while adding structure capable of supporting the wine's concentration. The oak can be prominent when young but is intended to integrate progressively during bottle ageing.

Can Penfolds Bin 707 2024 be enjoyed now?

Yes, although it is fundamentally a wine built for cellaring. Its concentration, tannins and new-oak maturation remain prominent at this stage. If opening a bottle young, 2 to 3 hours of decanting is advisable. For a more integrated and complex expression, we would favour several years in the cellar.
