Created in 1987, Domaine Pascal Jolivet is a vineyard located in the Loire Valley, between the appellation Sancerre and Pouilly Fumé.

This Sancerre white Sauvage 2017 vintage is made from a selection of 2 hectares of limestone parcels located in villages of Champtin and Bué-en-Sancerre.

This wine is made from old vines, grown organically, which produce exceptional Sauvignon Blanc grapes and a concentrated juice of great purity.

At the tasting, Sauvage 2017 Vintage releases a great freshness, vivacity, minerality, complexity and salinity at the end of the mouth. The nose is intense, in the mouth the wine is full and opulent, we will find almost the DNA of the best white Bordeaux. It is a perfect vintage for which only 15000 bottles are produced per vintage.

The advice of 12bouteilles: To taste right now, carafe it at least an hour before serving it to let develop its animal aromas. Serve it cool, around 11-12 ° C. It will go perfectly with a fish with cream.
