Pascal Jolivet : Sauvage 2015
This Sancerre blanc Sauvage 2015 is made from a selection of 2 hectares of limestone parcels located in my villages of Champtin and Bué-en-Sancerre. This wine is made from old vines, grown organically, which produce exceptional Sauvignon Blanc grapes and a concentrated juice of great purity.
At the tasting, Sauvage 2015 releases a great freshness, vivacity, minerality, complexity and salinity at the end of the mouth. The nose is intense, in the mouth the wine is full and opulent, we will find almost the DNA of the best white Bordeaux. It is a perfect vintage for which only 15000 bottles are produced per vintage.
The advice of 12bouteilles: To taste right now, carafe it at least an hour before serving it to let develop its animal aromas. Serve it cool, around 11-12 ° C. It will go perfectly with a fish with cream.
