A vinification without sulfur and without inputs. Vatting time of 21 to 28 days with only a few small punchings of the cap in order to favor a slow and progressive extraction. Aged 6 months in ovoid tanks and tuns. Bottled on the fruit day.
The Fondrèche plateau is made up of ancient alluvial deposits. The soil is very stony (rolled pebbles, flint and crystalline) and chalky from the surface with a sandy-clay texture.
