The Chablis 1er Cru Côte de Lechet 2024 is the signature wine of Domaine Bernard Defaix. As a major owner in this climat, the family crafts a wine of remarkable purity. In 2023, the vintage's generosity is channeled by the cru's natural mineral tension ("gunflint"), offering an upright, chiseled, and vibrant Organic Chablis.
Appearance: Pale gold with green and silver reflections, very brilliant.
Nose: Dominated by mineral notes of "gunflint". Floral aromas (acacia) and candied citrus emerge with air.
Palate: Lively and sharp. Dense and tight substance typical of this arid terroir. Saline and persistent finish.
Vineyard overlooking Milly on very rocky Kimmeridgian soil. 100% Chardonnay certified Organic, expressing exacerbated minerality.
Mixed aging: mostly stainless steel for freshness, with a small touch of old barrels (10-20%) for patina. 12 months on fine lees.
Masterful with warm oysters, salt-crusted sea bass, pan-seared scallops, or dry goat cheeses.
A great wine for aging (5-10 years). To enjoy young, decant for **1 hour** to relax its minerality. Serve at 12-14°C.
