Château Sainte Marguerite Fantastique Rosé 2025 is a serious gastronomic rosé and a Cru Classé Côtes de Provence, made from Grenache, Cinsault and Rolle. Sourced from selected plots within Château Sainte Marguerite's historic La Londe vineyards, it combines the richness of white peach and exotic fruit with remarkable citrus and floral freshness. Certified organic and vegan, the 2025 stands out for its precision, finesse and, above all, a long finish that takes it well beyond the realm of a simple aperitif rosé.
Colour: pearly pink with luminous golden highlights.
Nose: rich and precise, with white peach and pear accompanied by more exotic notes of lychee and passion fruit. Grapefruit zest brings freshness and definition.
Palate: fresh and upright, driven by citrus fruit and extended by floral notes of rose and a hint of jasmine. The texture remains elegant and beautifully balanced, leading into an exceptionally long finish for a Provence rosé.
Fantastique Rosé combines Grenache, Cinsault and Rolle from selected plots within the Château Sainte Marguerite vineyards. At La Londe, the vines enjoy a warm, dry Mediterranean climate moderated by maritime influences. Well-drained siliceous clay soils containing pebbles and fragments of quartz contribute to the finesse and freshness that define the wine.
Château Sainte Marguerite describes 2025 as a generous vintage showing a refined aromatic palette, vibrant freshness and remarkable balance. Grapes for Fantastique were harvested in September 2025. The resulting wine combines attractive fruit ripeness with the tension sought in the estate's finest rosés.
Following grape selection, cold skin maceration takes place before pressing. Fermentation is temperature controlled, and only the finest vats are selected for the final blend. The wine is then matured in tanks on its fine lees before fining, filtration and bottling. This approach preserves aromatic purity while adding texture and length.
Created in 2017, Fantastique is one of Château Sainte Marguerite's most ambitious expressions, produced at its historic La Londe estate, which holds Cru Classé Côtes de Provence status. The wine is certified organic by Ecocert and registered with the Vegan Society. It reflects the estate's focus on precise, structured rosés capable of accompanying serious cuisine.
Serve Fantastique Rosé 2025 at 8-10°C. Its structure allows for more ambitious pairings than a typical aperitif rosé: tuna tataki with ginger and sesame, poultry with morels, grilled fish, shellfish, lightly spicy Asian cuisine and even grilled red meat. It can be enjoyed immediately or kept for several years to develop additional texture.
Choose Fantastique 2025 as a genuine food rosé. White peach, exotic fruit and floral notes provide generosity, but its upright freshness and length are what truly distinguish it. Avoid serving it ice-cold: around 10°C in a white-wine glass will reveal considerably more texture and complexity.

Fantastique represents a more ambitious and gastronomic interpretation of rosé at Château Sainte Marguerite. It is produced from a selection of the estate's finest vineyard plots and aims for greater structure, precision and length. Symphonie offers a more immediately approachable expression, while Fantastique is particularly suited to fine dining and can also develop in bottle.
Yes, and this is one of the wine's defining characteristics. Its texture, freshness and long finish allow it to accompany dishes that are often difficult to pair with rosé. The estate itself recommends dishes such as poultry with morels, grilled red meat and tuna tataki with ginger and sesame.
Yes. Although its fruit and freshness make it enjoyable immediately, Fantastique is not designed solely for drinking within its first year. Its structure and fine-lees maturation allow for several years of short-term cellaring, during which the wine should gradually develop additional texture and complexity.
The estate recommends a serving temperature of 8 to 10°C. Serving it significantly colder would suppress its peach, pear, lychee and floral aromas as well as its texture. For a gastronomic tasting, we recommend serving it at around 10°C in a generous wine glass.
No. Its structure allows it to move well beyond traditional Provence rosé pairings. Poultry with morels, tuna tataki, Asian dishes with ginger or chilli and grilled meats are all compelling options. This versatility at the table is one of the main reasons to choose Fantastique over a lighter rosé.
Yes. Fantastique Rosé 2025 is certified organic FR-BIO-01 by Ecocert and registered with the Vegan Society. Both certifications are directly confirmed by Château Sainte Marguerite.
