Grown on the iconic south-eastern slopes, Pavie delivers in 2022 a wine of extraordinary intensity, combining concentration, precision and perfectly preserved freshness. True to its bold, sculptural style, the estate produces a deep, powerful and long-lived wine.
Tasting Notes
Appearance: very deep, almost black purple with violet highlights.
Nose: highly expressive, revealing blackberry, blackcurrant, dark cherry, liquorice, cocoa, fine spices, violet and a distinctive chalky minerality.
Palate: powerful and masterfully structured. Dense core supported by exceptionally fine-grained tannins. Freshness brings balance and lift, leading to an extremely long, majestic finish.
Terroir & Blend
Iconic Saint-Émilion terroir of clay-limestone soils on the plateau and limestone slopes. Blend dominated by Merlot, complemented by Cabernet Franc and Cabernet Sauvignon, ensuring structure, energy and outstanding aging potential.
Winemaking & Aging
Hand-harvested grapes with extremely strict selection. Parcel-by-parcel vinification followed by extended aging in French oak barrels, with a high proportion of new oak, seamlessly integrated and emblematic of Pavie’s style.
Food Pairings
Perfect with rib-eye steak, dry-aged beef, lamb, game, truffle dishes or fine gastronomy. Serve at 60–63°F (16–17°C). Decant for 2–3 hours when young.
