Bollinger PN TX20 is a celebration of the House’s Pinot Noir soul. This edition highlights parcels centred on Tauxières (TX) and complemented by signature Bollinger crus. Barrel fermentations and extended lees ageing deliver a Champagne of breadth, precision and true gastronomic appeal.
Appearance: pale gold with copper glints; a fine, steady mousse.
Nose: stone and red fruits (mirabelle, redcurrant), citrus zest, white flowers; underneath, toasted hazelnut, warm bread and wet-chalk minerality.
Palate: incisive and chalk-driven attack, generous mid-palate with yellow plum, pear and small red berries; long, mouth-watering finish with citrus peel and gentle spice.
Food pairings: sesame tuna tartare, salmon sashimi, roast chicken with jus, jamón ibérico, 24-month Comté. Serve at 10–11 °C in a tulip glass.
12bouteilles’ tip: a very brief aeration in a wider glass can help it open. Enjoy now for tension and brightness or cellar 5–7 years for more brioche complexity.
