Bollinger B16 delivers a vintage (2016) interpretation of the House’s Pinot-Noir identity: depth, density and poise. Selection of top crus with PN dominance, barrel fermentations, extended lees ageing and a measured dosage yield an intensely layered, textural Champagne.
Appearance: deep gold with amber hints; creamy bead.
Nose: black cherry, damson, orange peel, dried fruit; buttery brioche, light mocha, roasted hazelnut, chalk and forest notes with air.
Palate: broad and structured with Bollinger’s trademark grain; the richness of fruit and vinous drive are lifted by vibrant acidity. Long, savoury finish with fine cocoa and candied citrus.
Food pairings: roast squab, veal with morels, porcini risotto, trout meunière, aged Parmesan. Serve 10–12 °C.
12bouteilles’ tip: already excellent after 15–20 minutes in the glass; cellaring 8–12 years will bring honeyed, gingerbread and dried-fruit nuances.
