Ao Yun 2021 is an extraordinary wine crafted high in the mountains of China’s Yunnan region, near the foothills of the Himalayas. This vintage showcases the estate’s distinctive style: remarkable purity, altitude-driven freshness and deep, structured power. Produced in very limited quantities, Ao Yun 2021 stands among the greatest red wines of Asia.
Appearance: deep, opaque purple.
Nose: ripe blackcurrant, wild blueberry, black tea, incense, alpine herbs, sweet spices and a refined smoky-mineral note.
Palate: generous, velvety and impeccably structured. Dense yet refined tannins, vibrant acidity from altitude, flavours of dark berries, licorice, cocoa and Sichuan pepper. Exceptionally long, focused and elegant finish.
Grapes come from four mountain villages—Xidang, Sinong, Shuori and Adong—between 2,200 and 2,600 meters. Manual farming, extremely low yields, diverse soils and meticulous parcel selection. The blend is Cabernet Sauvignon–led, complemented by Cabernet Franc, Syrah or Petit Verdot depending on the year. Long aging in French oak barrels and wooden vats with controlled use of new oak.
Ideal with roasted red meats, slow-cooked lamb, game, refined Asian dishes, noble mushrooms or aged cheeses. Serve at 60–63°F (16–17°C). Decant for 1 hour.
