Riesling is certainly one of the oldest grapes of white grapes, born in Germany, it was already used in the Gallo-Roman era! This variety is mostly grown in Alsace and Moselle, but also in Italy, Australia, South Africa or California. There are more than 60,000 hectares planted with Riesling in the world! It is a grape variety that is popular in most vineyards where grapes are cultivated, although they are very comfortable on rather light and shaly soils. Its presence in Alsace is logical, because of its ability to withstand the very cold winters of the continental climate. Riesling, however, is a fragile grape susceptible to drought and gray rot. Its clusters and the berries that compose it are small and compact, of a golden yellow color and dotted with small red spots when the grapes are mature. Resling is often used in the grape varieties of Alsace. It produces dry or sweet white wines from late harvests or selections of noble grains with very high sugar concentrations. Riesling wines have great aromatic complexity and good acidity.
